Marshmallow Production

Process Description

Ingredients are blended and heated in the mix tank. The liquid product is then cooled and gelatin is added. A Votator® scraped surface heat exchanger assists with heating and cooling the product. After batching is complete, the product is transferred to a holding tank. It is then pumped through a WCB CR Mixer by a Waukesha rotary positive displacement pump. In the CR Mixer, filtered air is finely dispersed throughout the product. The product is then cooled to final temperature by a Votator® scraped surface heat exchanger prior to filling or extrusion.

Process System Features

  • WCB CR Mixer combines product recycling and shear action for mixing that can be tuned to exactly the right amount of physical work. Continuous mixing, blending, dispersing and whipping is accomplished with full control of the amount, the intensity and the duration of the whipping action.
  • Votator® scraped surface heat exchangers yield the most efficient heat exchange for extremely viscous products and crystallizing applications.
  • Accurate addition of the filtered air, as well as control of the whipping action and cooling, assures consistent product quality.
  • Batching system can be used with a variety of raw ingredients.
  • System and equipment designed for CIP.
  • Programmable logic controls available for repeatable product consistency.
