Icing Production
Process Description
Fondant from a fondant production system is transferred into an icing mix tank. Fondant is a confectionery base that is made by cooling and crystallizing a concentrated solution of sugar and corn syrup. Flavoring, colors, oil and other ingredients are added to the mix tank to create icing. The tank is kept warm to enhance the mixing process. The product is then pumped by a positive displacement pump through a Votator® scraped surface heat exchanger where it is cooled to filling or use temperature. Nitrogen or air can be added to the icing using a nitrogen injection system and a WCB CR Mixer.

Process System Features
- Votator® scraped surface heat exchangers yield the most efficient heat exchange for extremely viscous products and crystallizing applications.
- Constant and accurate temperature control produces consistent product texture.
- Optional WCB CR Mixer accomplishes whipping with full control of the amount, the intensity and the duration of the whipping action. Accurate addition of the filtered air, as well as control of the whipping action and cooling, assures consistent product quality.
- Batching system can be used with a variety of raw ingredients.
- Programmable logic controls available for repeatable product consistency.
