Hot Fill Tomato Paste Processing

Process Description

Tomato paste is supplied from the evaporators to the evaporator surge tank. The product is pumped through tubular heat exchangers where it is heated to the correct processing temperature. It is then held in a hot holding tank prior to further processing. The product is transferred from the hold tank to a flash vessel where the temperature and solids concentration are adjusted for filling. From the flash chamber, the product is pumped to an aseptic surge tank and then to the filler. The piping downstream of the hot hold tank is sterilized with hot water; while the flash chamber and aseptic surge tank are sterilized with steam.

Process System Features

  • Indirect tubular heat exchangers eliminate adding condensed steam to concentrated product.
  • Better temperature and concentration control than steam injectors.
  • High velocity, reduced residence time and hot water heating minimize potential product fouling in the tubular heat exchanger.
  • Reduced load on evaporator, increasing potential throughput and allowing more consistent operation.
  • Programmable logic controls available for repeatable product consistency.
  • Optional corrugated tubular heat exchangers to replace the flash chamber.
