Continuous Tubular Processing Of Aseptic Soup & Stews
Process Description
After starch and seasonings are dissolved in warm water in a high shear mixer, the slurry is transferred to batching tanks. The solution may be precooked during the transfer using a steam injection heater and holding tube to gelatinize the starch. Additional water, garnish and other ingredients are added to the batching tanks. The product is then supplied to a product balance tank which feeds product to the continuous processing system. The product is pre-heated by regeneration, then heated to 290°F prior to the holding tube. After the product is held for the required time at temperature, it is pre-cooled using regeneration . Final cooling is to 80°F/100°F for aseptic packaging.

Process System Features
- Process utilizes tubular heat exchangers in an all series flow path eliminating potential sterility problems associated with multiple flow path designs.
- Single heat exchanger flow path improves particulate identity.
- Greatly reduced maintenance cost due to minimal moving parts.
- Regeneration capabilities of up to 55% vs. 0% with scraped surface heat exchangers.
- Reduced starch requirements.
- Extended run times prior to sterile in-run rinsing.
- System is CIP cleaned from the balance tanks.
- Programmable logic controls with automatic sequencing of various operations and sterility interlock.
