Continuous Cold Fill Ketchup Processing (Without Particulates)
Process Description
The various raw ingredients are pumped from the raw ingredient storage tanks to the blending tank. From the blending tank the ketchup is pumped through the regenerator where it is pre-heated using a WCB plate heat exchanger section. The product is then heated to approximately 250°F in the final heater section and held in the hold tube for a timed period. After holding, the product is cooled in regeneration and final cooler sections to the desired filling temperature. An optional deaerator may be used before filling to remove any entrained gasses. The product is homogenized by a WCB homogenizer immediately prior to filling.
