Continous Fondant Processing
Process Description
A solution of sugar and corn syrup is prepared in jacketed mix kettles where the solution is heated until the sugar is dissolved. The solution is pumped through a WCB plate heat exchanger where it is heated to the correct temperature to yield the desired final solids level. The product then flows to a flash chamber where water vapor is removed to yield the final solids concentration. A portion of the product is recycled through the plate heat exchanger to insure high process velocities. The concentrated solution is cooled and crystallized to yield a high quality fondant in a Votator® scraped surface heat exchanger.

Process System Features
- Votator® scraped surface heat exchanger provides a means of rapid, controlled cooling.
- Low residence time in the cooler inhibits growth of large sugar crystals.
- Evaporator recirculation loop yields high heat transfer in the product heater and optimum control of final product concentration.
- Continuous production minimizes variations with minimal operator attention.
- CF Semi-continuous operation available for small operations. Allows batch-wise formulation and concentration with the benefits of cooling in scraped surface heat exchangers.
- CF Programmable logic controls available to automate all operations.
