Cold Fill Ketchup Processing (With Particulates)
Process Description
The various raw ingredients are pumped from the raw ingredient storage tanks to the batching tanks where garnish is added. From the batching tanks, the ketchup is pumped through the raw regenerator where it is pre-heated using WCB tubular heat exchangers. The product is then heated to approximately 250°F in WCB tubular heat exchangers and held in the hold tube for a timed period. After holding, the product is cooled to the desired filling temperature using WCB corrugated pasteurized regenerator and final cooler heat exchangers. An optional deaerator may be used immediately before filling to remove any entrained gasses.
