Aseptic Fruit Puree Processing
Process Description
Raw fruit is pulped, and the seeds and stems removed in a series of mechanical pulper/finishers prior to the system product balance tank. Raw product from the balance tank is transported by a Waukesha positive displacement feed pump to the optional deaerator. From the deaerator, a Waukesha positive displacement outlet/timing pump transports product through a colloid mill or homogenizer for texturizing. The raw product then enters the WCB corrugated tubular heat exchanger raw regeneration section where it is pre-heated. The product receives final heating in a WCB corrugated tubular heat exchanger and is held in a holding tube for a predetermined amount of time. From the holding tube the product is pre-cooled in a WCB corrugated tubular heat exchanger sterile regenerator section. The product is cooled and ch illed to the desired filling temperature in WCB corrugated tubular heat exchanger final coolers. Water from the water balance tank is used for CIP of the system and for system sterilization prior to running product.
Process System Features
- Utilization of efficient corrugated tubular heat exchangers results in 30-40 percent higher heat transfer rates and resulting lower residence time compared to smooth tube heat exchangers.
- Greatly reduced maintenance cost vs. scraped surface heat exchangers.
- Indirect regeneration capabilities of up to 55% vs. 0% with scraped surface heat exchangers.
- Direct regeneration possible with less viscous, non-particulate products.
- Improved flavor, color and particulate identity.
- System flexibility allows production of multiple products.
- Low maintenance costs due to fewer moving parts.
- Optional deaeration minimizes oxidation.
- Optional colloid mill or homogenizer texturizes product insuring uniform product consistency.
