Aseptic Fruit Processing System (Fruit For Yogurt Or Pie Filling)
Process Description
Fruit and carrier syrup are mixed in horizontal mixers. Raw product is pumped through the system by a Waukesha positive displacement pump. The product is heated in a WCB corrugated tubular heat exchanger and is held in a holding tube for a predetermined amount of time. From the holding tube the product is cooled in a WCB corrugated tubular heat exchanger using tower water. If necessary, the product can receive additional cooling to the desired filling temperature using WCB corrugated tubular heat exchangers or WCB scraped surface heat exchangers operating on chilled water or direct expansion refrigeration. The product is filled into portable tote tanks that have been pre-sterilized and pressurized. After a tote is connected to a filling station, the hoses are sterilized with steam prior to filling the tote with product. Water from the water balance tank is used for GIP of the system and for system sterilization prior to running product.
