Aseptic Diced Tomato Processing In Single Strength Juice or Puree

Process Description

Calcified and acidified diced tomatoes and juice are mixed in a semi-continuous two-tank blending system to
the proper drain weight. The product is fluidized in the juice to maintain a homogeneous mixture through the
corrugated tubular heat exchanger while maintaining low system pressures. This mixture maximizes the drain
weight yet minimizes the damage to the particulates during the thermal process. From the batch tank, the
product flows to the system timing pump to provide the motive force to control the flow through the corrugated
tubular heat exchangers. After final cooling, the product is aseptically dejuiced to the packaging drain weight
prior to aseptic packaging in bag-in-box or form-fill-seal equipment. The same process equipment can run diced
tomatoes in a puree base. The puree-type products DO NOT require the use of an aseptic dejuicer.

Process System Features

  • Continuous one-tank horizontal blending tank design.
  • High volume displacement per revolution on the WCB positive displacement timing pump.
  • Utilizes efficient corrugated tubular heat exchangers producing lower system volumes and residence times and less product loss during sterile separations.
  • Process system can run for weeks at a time without having to be CIP cleaned.
  • Products can be aseptically dejuiced to minimum of 70/30 drain weights.
  • System can be sterilized rapidly with closed loop sterilization design.
  • Temperature equalization system insures proper heat penetration.
